Duck Ragu Tagliatelle

Ingredients:

duck, some carrots, celery, onions, garlic, thyme, tomato paste, orange,

salt, black pepper, chili flake, parmigiano reggiano

Sear duck leg, add mirepoix

Add the rest of bones, make sure be gentle to not break small bones.

Add water and simmer for a few hours, then take the take the duck parts out, de-bone the legs, add the meat back to the ragu.

Add salt, black pepper, and chili pepper to taste.

Bonus: render fat from all the duck skin for future use!
