Week 9: Sausage & Broccoli Rabe Cavatelli
Hand-rolled cavatelli tossed with linguica sausage, garlic, and broccoli rabe, finished with a touch of lemon and Parmigiano.
Ingredient: Linguica sausage, broccolini, lemon, garlic, thyme
salt, pepper, chili flake, homemade chicken stock, parmigiano reggiano.
To make cavatelli, roll dough into long strings, cut into smaller pieces.
Use finger to press down the center, push to each side.
Split the sausage, saute until brown.
Blanch the chopped broccolini for 2 min, leave the root part for 1 extra minute. Take out and chill with ice water to preserve the green color.
Drop in thyme and minces garlic with the sausage, pan fry for 1 minutes until garlic is golden.
Mix almost-fully cooked cavatelli into the sausage mix, add broccolini and home-made chicken stock. Add splash of lemon juice and parmigiano before plating.
