Week 8: Pear-Gorgonzola Spaghetti

Homemade spaghetti tossed in a pear–Gorgonzola cream, folded with garlic breadcrumbs, served over green leaf puree.

Ingredients: Breadcrumb, garlic, honey, pear, gorgonzola, green leaves

salt, black pepper, chili flakes, butter

caramelize diced pear

After pear is golden, melt gorgonzola, add dash of honey. Add some water while mixing

add butter, diced garlic and breadcrumb

after browning, take out the garlic-breadcrumb and drain the oil

blanch the green leaves, blend until smooth

toss fresh pasta with the gorgonzola-pear mixture. Right before plating, add in crispy garlic-breadcrumbs
